Colombia El Indio
Felipe and Carlos Arcila, 4th generation coffee growers, co-founded Cofinet. Their father, Jairo Arcila, also a coffee grower, has been in the business for decades. In 2015, they expanded into specialty coffee, introducing innovative fermentation techniques. At La Pradera, their farm and Processing Centre, they handle exotic coffee varieties, revealing new Colombian coffee profiles.
This coffee undergoes meticulous hand-picking to select only the ripest cherries, followed by hand sorting to eliminate defects. It's then sun-dried on raised beds with controlled temperature until reaching the perfect moisture level. This microlot consists entirely of Caturra beans.
